Rustic Polenta Muffins with Pine Nuts

These muffins are savory and studded with pine nuts which make them an excellent accompaniment to dinners and luncheons. They are also great as breakfast dish. The best part is that they are easy to prepare and do not take too much time. They are healthy along with being filling and satiating.

POLENTA MUFFINS

The recipe is simple and does not require any grueling work on your part.

  • 1 cup water
  • 1/3 cup ghee with garlic and rosemary
  • ½ cup polenta
  • 1 cup unbleached white flour
  • 2 tbsp organic brown or raw sugars
  • ¾ tsp baking soda
  • 1 tsp baking powder
  • ¾ tsp salt
  • 1 cup organic butter milk
  • Pre heat the oven to 400 degrees. Apply butter on a muffin tin.
  • On the other hand boil the water and stir in the polenta slowly.
  • Cover this and remove from the heat without cooking.
  • Let the mixture cool down to room temperature. Leave this aside and mix the flour, sugar, baking powder and baking soda along with the salt.
  • Beat the ghee into the polenta until all the lumps are dissolved.
  • Add this to the dry ingredients and then add the buttermilk.
  • Beat the mixture till the ingredients are properly mixed together.
  • If you end up overbeating then the muffins will come out tough.
  • Pour the mixture in a muffin tin and bake for 20 minutes which is the time that it takes for the muffins to be ready.
  • Avoid over baking because the pine nuts will burn spoiling the taste of the muffins.
  • Remove each muffin one at a time into a platter serve warm with ghee and garlic and rosemary as a spread.
  • Polenta is a low carbohydrate food which is a good source of vitamin A and vitamin C along with being rich in carotenoids, zeaxanthin, and lutein.
  • Polenta prevents heart disease and is also good for people who have celiac disease, which is a gluten sensitivity.
