Ayurvedic Recipe for Apple Pancake

This recipe makes 16 pancakes with 3 inch diameter and is good to serve 4-5 people. Moreover they are made with crepe batter which is more moist and softer compared to other pancake batters. The pancakes are sweet due to the apple in them and you do not need to add any topping. These pancakes can be eaten by themselves and make for a delicious meal. The procedure of making these pancakes is quite simple and you can opt for these when you do not have the time for any other elaborate dish.

The recipe is simple and does not require any grueling work on your part.

  • 1 ½ cups unbleached white flour
  • 2 tbsp arrow root
  • ½ teaspoon salt
  • 1 ½ tbsp organic sugar
  • One pinch of cardamom powder
  • 2 teaspoons ground almonds
  • 1/8 teaspoon ground cinnamon
  • 1 ½ cups plain soy milk
  • 2 tbsp melted ghee
  •  
  • Mix all the dry ingredients in a bowl add the ghee and soy milk to mix it into a smooth thick batter with a whisk or in the mixer.
  • Remove the peel and core of the apples and grate them on a medium grater.
  • Then add the grated apples to the batter. Place a skillet on medium heat and coat with ghee. Pour 1/3 cup of batter on the skillet and you can make 3-4 pancakes at a time depending on the size of the skillet.
  • You need to turn the pancakes on the other side, when the sides of the pancakes turn hard. Cook both sides till they become golden brown.
